Vegan Rice Pudding
2 Cups Cooked Brown Rice (Save half a cup)
3/4 - 1 Cup Non-dairy milk Based on your Non-Dairy Milk choice you may need to adjust sweetness
1/2 -3/4 Cup Sliced Bananas Or 1-2 tbsp of chopped dried fruit, coconut sugar or maple syrup.
1/4 - 1/2 tsp cinnamon
A few pinches nutmeg
1/8 tsp sea salt
Yield: 4 Servings
In a small saucepan, add 1 1/2 cups of the cooked rice.
Add the remaining ingredients starting with 3/4 cup of milk.
Puree the mixture using a hand blender. (You may also puree ingredients before adding to saucepan)
Add the 1/2 cup of rice, and turn heat to medium-low.
Let it thicken and warm for several minutes. (You can add the rest of the milk if you would to thin it)
Adjust with sweetener and orange/lemon zest if desired and Enjoy!
