Pumpkin Butter

Ingredients

  • 1 29 oz can pumpkin puree not pumpkin pie filling

  • 1/2 cup granulated sugar

  • 1/2 cup light brown sugar

  • 1 cup 100% apple juice may also use apple cider

  • 2 tsp cinnamon finely ground

  • 1 tsp ground ginger

  • 3/4 tsp whole nutmeg freshly grated

  • 1/2 tsp ground cloves

  • 2 tsp lemon juice freshly squeezed

    Yield: 5 Servings

Instructions

  1. In a microwaveable and heatproof bowl, combine all ingredients except for the lemon juice. Cover loosely.

  2. Cook for 6 minutes on high and stir. Cook for another 6 minutes and stir. Finally, cook for 3 minutes and stir. Remove from microwave, remove covering and stir in lemon juice.

  3. Cool completely. Cover so it is airtight and store in the refrigerator.

Prep Time: 00 hrs. 10 mins.

Cook time: 00 hrs. 15 mins.

Total time: 25 mins.
