1 29 oz can pumpkin puree not pumpkin pie filling
1/2 cup granulated sugar
1/2 cup light brown sugar
1 cup 100% apple juice may also use apple cider
2 tsp cinnamon finely ground
1 tsp ground ginger
3/4 tsp whole nutmeg freshly grated
1/2 tsp ground cloves
2 tsp lemon juice freshly squeezed
Yield: 5 Servings
In a microwaveable and heatproof bowl, combine all ingredients except for the lemon juice. Cover loosely.
Cook for 6 minutes on high and stir. Cook for another 6 minutes and stir. Finally, cook for 3 minutes and stir. Remove from microwave, remove covering and stir in lemon juice.
Cool completely. Cover so it is airtight and store in the refrigerator.
