Gluten Free, Soy Free Vegan Dal

Ingredients

  • 1/2 Cup red lentils always rinse and drain!

  • 1 tsp olive oil

  • 1/3 tsp cumin seeds

  • 1/8 tsp fennel seeds

  • 1/2 tsp turmeric

  • 2/3 tsp salt

  • 2.5 Cups water

  • 1 Cup spinach

    Yield: 4 Servings

Instructions

  1. Heat oil in a saucepan, add whole spices in order, stir and allow to pop.

  2. Add turmeric, stir, then add lentils, mix and roast 1 minute.

  3. Add spinach.

  4. Add water and salt. Cover partially and cook 15 to 20 min, till lentils are done.

  5. Fold in spinach. Taste and adjust salt and heat. Simmer for two minutes.

  6. Serve over rice.

    Prep Time: 00 hrs. 05 mins.

    Cook time: 00 hrs. 25mins.

    Total time: 30 mins.
