Gluten Free Corn Fritters

Ingredients

  • 2 Cups corn kernels

  • 1/4 Cup fresh chopped basil

  • 1/4 Cup chopped red onion

  • 1 tsp lime juice

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1/2 tsp garlic powder

  • 1/2 Cup white rice flour

  • 3 Tbsp cornmeal

  • 1/2 tsp baking powder

  • 1/2 Cup water or more if needed

    Yield: 2 Servings

Instructions

  1. In a medium bowl, add all ingredients but water and stir to distribute.

  2. Slowly add water and mix until mixture is moistened, thicker than a batter.

  3. Heat an oiled skillet to medium heat, drop in large spoonfuls of mixture and flatten with the back of a spoon. Cook 4-5 minutes each side, until golden brown.

  4. Serve immediately with vegan ranch dressing or sour cream.
