Gluten and Dairy Free Macaroni and Cheese
1 box gluten free pasta Also check the label to make sure there is no cross-contamination with egg products.
1 1/2 cups unsweetened milk of choice May use soy, coconut, or almond to make it dairy free.
16 oz bag carrots
3 TBSP avocado oil
3 TBSP rice flour
1 tsp onion powder
1/2 tsp garlic powder
1/4 tsp paprika
3/4 tsp salt
Cook pasta according to the directions on the box.. Set to the side.
Boil carrots until they are tender. Mix until smooth (hand processor works well).
Over medium heat, heat the oil in a saucepan. Add flour, using a whisk. Cook for approximately two minutes.
Whisk in the milk slowly. The sauce will get thick quickly, but keep stirring for several minutes.
Add carrots and spices. Mix well and add additional spices if needed.
Pour the sauce over the pasta, making sure you coat all the noodles. This dish is best when served on the day it is cooked.
