Egg Free Banalicious French Toast
1 large banana slightly overripe
4-5 slices bread slightly stale is good, whole wheat will hold up better, if you can get away with it.
1/2 tbsp ground flax seed meal OR your fave egg replacer. You can even omit, in a pinch.
1 cup nondairy milk
1/4 tsp cinnamon
1/2 tsp vanilla extract (skip if your milk is vanilla flavored)
Mash the banana in a bowl with a fork. Add spices and egg replacer and combine.
Slowly add milk until you reach a thick consistency, not too watery.
While you heat a pan to medium with Earth Balance or other vegan margarine, soak each slice of bread for just a few seconds, until they are fully saturated with banana mixture.
Fry each side until lightly browned, and serve with fruit of your choice, or non-dairy yogurt.
