Dairy Free Strawberry Ice Cream
2 cups strawberries May use fresh or frozen
1 can coconut milk full fat
1/2 cup maple syrup or honey
1 tsp xantham gum
1/2 tsp vanilla extract
1/4 tsp almond extract
Yield: 4 Servings
Mix all of the ingredients in a blender until creamy.
Add mixture to a loaf pan and cover with plastic wrap.
For a soft serve ice cream, freeze 4-5 hours. For a firmer set, freeze at least 5 hours or overnight. Thaw for five minutes before serving.
